Can add a few chives if you want. Go fancy and put chopped green onions and bacon bits (real, not the baco-bits fakes) and you've got a main dish. . . . baked potatoes should be baked. We do, of course, boil potatoes for soup, or prior to mashing them (although I suppose steaming would work there). With a roast (which we have rarely) we prefer them oven browned -- quartered or halved and allowed to cook in the juices while the roast cooks.
