Queensland Baked Apples (serves 8)

2 1/2 cups orange/mango juice
1/2 cup golden syrup
1/4 cup brown sugar
1 tabsp lemon juice
2 teasp ground ginger
1 teasp ground cinnamon
1 teasp cornflour
1 teasp vanilla
8 green apples (i.e. Granny Smiths)
3/4 cup sultanas
1/4 cup chopped macadamias
1/4 cup white shaved chocolate

Preheat oven to 180 deg C. Combine first eight ingredients, stir well and set aside. Peel top half of each apple so that they do not explode and place in shallow roasting pan. Fill centres of apples evenly with sultanas and macadamias. Pour mixture over apples and bake for 1 hour or until tender, basting apples twice with syrup from pan. To serve drizzle with remaining syrup and shaved chocolate. Energy 1000kj; fat 5g a serve.

NB this is a metric cup (250 ml), slightly larger than US(230ml).
If no golden syrup available, use maple syrup - although sugar maples are not a regular feature of the Qld. landscape!
