Apple Cinnamon Muffins

Combine and let stand for about 1/2 hour:
6 Shredded Wheat biscuits, crushed (about 2 cups)
2 Cups buttermilk
1/3 cup honey

Combine:
1 1/2 cups white flour
1 cup whole wheat flour
1 tsp salt
1 1/2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg

Combine:
2 eggs or 3 egg whites or 1/2 cup Egg beaters
1 1/2 cup buttermilk
1 apple, peeled and grated

Stir together all wet and dry ingredients. You may have to add a bit more buttermilk. Stir just until moistened.
Spray muffin tins with Pam. Fill cups full of batter.
For apple muffins, sprinkle tops with cinnamon sugar. Bake at 400° for 20 - 25 minutes.
Makes about 16 good sized muffins.
