Apple Cheese Crisp

Filling
5 medium apples, preferably Jonathan or Paula Reds or Prairie Spy
1/2 cup granulated sugar
1/2 cup brown sugar
1 tsp grated lemon rind
1/2 tsp ground cardamom
1/2 tsp ground cinnamon
2 tbl water or cider
1 tbl fresh lemon juice

Topping
1 cup all-purpose flour
1/2 cup granulated sugar
1 tsp salt
1 cup shredded sharp cheddar
1/2 cup (1 stick) butter

Makes 6 servings.

Preheat the oven to 325° F. Peel, core and slice the apples into a buttered 8-inch square baking dish. In a small bowl, combine the sugars, rind, cardamom and cinnamon. Sprinkle over the apples and mix with your hands. Sprinkle the water or cider and lemon juice over the apples.

In a medium bowl, combine all the topping ingredients and mix to a crumbly consistency. Pat over the apples. Bake for 55-60 minutes, or until the mixture is golden brown and bubbles up in the center. Serve warm with cream.
