Festive Amaretto Fruit Bread

[milk may be substituted for liqueur]

1.75 Cups all-purpose flour
.66 Cup granulated sugar [white]
1 tablespoon baking powder
.5 teaspoon salt
1 egg
1 Cup milk
.25 Cup vegetable oil
3 tablespoons amaretto liqueur
1 teaspoon almond flavouring [extract]
.5 Cup each: coarsely chopped candied cherries,
coarsely chopped glazed pineapple, chopped mixed peel
.5 Cup toasted slivered almonds

Measure flour, sugar, baking powder and salt into bowl.
Stir with fork untill blended. Make well in centre.
Beat together egg, milk, oil, amaretto, and almond flavouring
until blended. Pour into centre of flour mixture.
Immediately add cherries, peel, pineapple, nuts.
Stir just intill dry ingredients are moistened.
Batter will be lumpy. [!]

Spoon batter into greased 9 by 5 inch loaf pan.
Smooth top.

Bake in centre of preheated 350F oven until knife inserted into loaf,
right to pan bottom, comes out quite clean,
from 1 hour 5 min. to 1 hour 15 min.

Store covered at room temp. for up to 3 days. Or freeze.
Makes one loaf with 16 slices. [Or two smaller ones.]
