St. Sam's and St. Bede's Recipe Pages Bon Appetit! --------------------------------------------- ZUCCHINI JAM 6 cups grated peeled zucchini 6 cups sugar 2 tablespoons ReaLemon 1 8-ounce can crushed pineapple 1 6-ounce package orange Jello Boil zucchini 6 minutes. Add sugar, ReaLemon, and pineapple. Boil 6 more minutes and add Jello. Put in hot jars and seal. Process in boiling water bath for 8 minutes. I don't know if that is necessary if the jars and lids are hot and the jam is too. I rarely process my homemade jams, just turn the jars upside down for about 5 minutes and then turn them right side up. Soon you hear the POP that tells you they're sealed.
