St. Sam's and St. Bede's Recipe Pages Bon Appetit! --------------------------------------------- Tomato Gravy with...........whatever: 2 cups chopped fresh tomatoes 1 cup or so (8 oz can) tomatoe sauce 3 tbsp butter 3 tbsp flour 1/2 cup chopped onion 1/2 cup chopped bell pepper 1 to 1 1/2 cup chicken broth (depending on final consistency desired) 1 tsp sugar 1/2 tsp dry mustard 1 tsp fresh basil, chopped fine 1/2 tsp fresh ground black pepper 1/4 tsp cayenne or tabasco sauce (to taste) Melt butter in large skillet and saute onion and bell pepper till tender Blend in flur and cook just a bit Add the chicken broth, tomato sauce, sugar and spices. Bring to boil, cover and simmer for 15 - 20 minutes. WARNING: for those of you who use Tony's Creole seasoning - don't substitute it here, as canned chicken broth is salty enough.
