Dirty Rice (Rice Dressing to you Yankees): 

1/2 lb lean pork - ground or chopped fine 
1/2 lb chicken gizzards - ground or chopped fine 
1 cup rice 
1 can onion soup 
1 can cream of mushroom soup 
1 cup chopped green onion (including tops) 
1 onion chopped fine 
1/2 cup celery chopped fine 
1 cup parsley 
1 bell pepper choppe 
salt/red & black pepper 

Mix meat with raw rice. Add veggies, mix in soups and season. 
Put in heavy casserole or dutch oven, cover tightly and bake at 325 for two hours.
