St. Sam's and St. Bede's Recipe Pages Bon Appetit! --------------------------------------------- Smothered Creole Leeks - Ramps (the grocery store variety is not quite so offensive to those that don't care to partake as the wild ones) - look for the wild ones in late spring. Cut off the green tops and feed to the compost pile. Cut the bottoms in 1/2 inch slices, season with creole seasoning or lacking that, salt pepper & a little worchestershire with just enough water to cover. Cover and simmer until tender and all the water's absorbed. Mash with 1/2 stick of butter. Remove from fire, add two eggs, 1/4 cup cream & mix well - serve hot. - pax - Andrew H.
