St. Sam's and St. Bede's Recipe Pages Bon Appetit! --------------------------------------------- SIMNEL CAKE FOR THE CHURCH OF THE ASCENSION 9 oz butter 1 lb 8 oz sugar 1 lb 8 oz all-purpose flour 9 eggs 11-12 oz (depending on how it's packaged) peel of candied orange and lemon 2 oz raisins Combine in five-quart mixing bowl and mix. Bake at 350F for 30 minutes, then 325F for 15 minutes. Wrap and cover until you finish the cake. Makes TWO 9-inch cakes in half-filled pans. Cut off tops to produce two flat 1-inch layers.
