St. Sam's and St. Bede's Recipe Pages Bon Appetit! --------------------------------------------- SCALLOPS & MINT 4 tbsp butter 5 or so scallions, sliced 1/4 -1/2 tsp. salt 2 lbs, more or less, depending on who's eating, small bay scallops 2 carrots, finely grated 1 to 2 tbsp ginger, minced 1/4 tbsp pepper 2 tbsp fresh mint, chopped Saute ginger & scallions in butter till tender Add scallops, a few at a time - cooking approximately 2 minutes per batch, or just until opaque clear through scallops being even easier than shrimp to over-cook. Set scallops aside, add carrots and cook about 10 or 15 minutes till soft. Add scallops & mint. Remove immediately once scallops are warmed through and serve. - pax - Andrew H.
