St. Sam's and St. Bede's Recipe Pages Bon Appetit! --------------------------------------------- Rock Cakes 1 cup plain flour, 1 teaspoon baking powder 50 gm butter 1/4 cup sugar 1/2 cup currants 1/4 cup dried mixed peel 1 egg, beaten, 2 tablespoons of milk. Sift flour and baking powder, rub inthe butter till mixture resembles bread crumbs. Add sugar, currants and peel. Add egg and enough milk to make stiff dough. Place in rocky heaps on greased oven tray and bake at 200 C for 10 or 12 minutes. My Mum used to mix in Cornflakes (a breakfast cereal in crisp flakes presumably squashed wheet grains) to make even more "rocky" texture. The main texture is not overly hard, wouldn;t break any teeth, but is a bit firmer than scones.
