St. Sam's and St. Bede's Recipe Pages Bon Appetit! --------------------------------------------- "Priory Altar Bread" (Sister Kiara) 7/8 cup lukewarm water 3 Tablespoons honey (can add 1 more of honey, molasses or brown sugar) 1 pkg. yeast 1-1/2 Tbs. oil 1/4 tsp. salt (make it 1/2) 2-2/3 cups whole wheat flour (or 1/2 whole wheat 1/2 bread flour), or enough flour to make soft, manageable dough Dissolve honey and yeast in water. Add oil, salt, flour. Knead until firm and elastic, 5-10 min. Place in greased bowl, cover with a damp cloth. Let rise until double in bulk. [It can be frozen at this point or kept refridgerated for no more than two days]. Divide the dough into 2 equal parts. Knead briefly into small, round loaves. A small pie pan will make a round loaf for 150-200 people. Bake immediately (no 2nd rising) in 350 degree oven for about 30 min. The loaves should sound hollow when tapped; but not get too brown on top. This recipe for communion bread makes a loaf which breaks easily and does not crumble. A loaf 6" x 1 1/2" - 2" will serve about 200 people.
