St. Sam's and St. Bede's Recipe Pages Bon Appetit! --------------------------------------------- Mimi’s World Famous Norwegian Meatballs Meatballs: Combine 1/2 cup Coffee with 1 cup of Half & half in which you Soak 3 cups of soft bread crumbs Grind together (or mix thoroughly) 1 1/2 lbs Lean Ground beef 1 lb Ground Turkey 1/2 lb Ground pork Brown 1 cup finely chopped onion in 2 Tb Butter Mush it all together with: 2 eggs 1/2 cup finely chopped parsley 2 tsp nutmeg 1 Tb Salt 1/8 tsp white pepper Beat at medium speed until fluffy (maybe 10 minutes) Roll into 1 inch balls. Brown in butter, shaking pan to keep them from flattening. Remove from pan an set aside. Gravy: Into browning pan mix 4 Tbs flour to make roux. add 1 cup rich beef stock (or undiluted beef broth) 1 cup coffee and 1 tsp nutmeg Heat & stir until thickened.
