Mash througouly then add a good nob of butter. Mash again over low heat until butter is totally absorbed. Then add thick cream a little at a time, again over a low heat, mixing until the mix is light and fluffy. You can add herbs, seasoning,or any other flavouring to your taste. By doing it over heat you evaporate remaing wather and keep the potatoes hot.
