St. Sam's and St. Bede's Recipe Pages Bon Appetit! --------------------------------------------- Marinated Mushrooms and Romaine Salad Ingredients 1 good sized bunch of romaine 3 ounces fresh mushrooms, halved (Large mushrooms are better) 3 tablespoons chopped chives, (For garnishing) 2 good sized ripe tomatoes TO PREPARE: Clean throughly and chop or tear romaine into bite-sized pieces. Place mushroom halves in a covered dish or plastic storage bag. VINAIGRETTE: 1/4 cup white wine vinegar 3/4 cup vegetable oil 4 teaspoons sugar 3 large scallions, sliced 1/4 teaspoon dry mustard 3 teaspoons lemon juice 3 cloves garlic, minced Place vinegar,sugar, lemon juice, mustard,oil, scallions and minced garlic into a bowl and whisk lightly until sugar is disolved and mustard mixed well in. Pour mixture in with mushrooms, making sure that they are well covered. Place in refrigerat for 4 to 5 hours, stiring occasionally if mushrooms are in a dish. Strain mushrooms, keeping the vinaigrette to one side. Place romaine in a glass bowl and spoon the mushrooms on top. Give vinaigarette another quick whisk and por over the top, making sure to spread it as evenly as possible, garnish with snipped chives. Slice tomatoes thinly and arange around the edge of the salad.
