St. Sam's and St. Bede's Recipe Pages Bon Appetit! --------------------------------------------- Maple Cookies 3 1/2 cups all-purpose flour 2 teaspoons baking powder 1/2 teaspoon salt 1 cup butter, softened (no substitutions) 1 cup firmly packed brown sugar 2 large eggs 1/3 cup pure Maple syrup 1 teaspoon vanilla extract Combine flour, baking powder and salt in medium bowl. Beat butter with brown sugar in a mixer bowl until light. Add eggs one at a time, beating until light and fluffy. Beat in syrup and vanilla. Gradually add dry ingredients, beating just until blended. Wrap dough and refrigerate 4 hours or overnight. Preheat oven to 350 F. Grease 2 cookie sheets. Divide dough into quarters. Between 2 sheets of wax paper, roll one quarter of the dough 1/8 inch thick (keep remaining dough refrigerated). Remove top sheet of wax paper. Cut into desired shapes with cookie cutters. Bake 8 to 10 minutes, until edges are golden. Repeat with remaining dough, rerolling scraps. Decorate as desired. Makes 6 dozen. Peace, Kris Essex Junction, VT
