In a large skillet or wok put some oil, some freshly pressed garlic, and chopped red and green peppers, squash, zucchini, broccoli, onion, and saute until just barely tender. Maybe add some sweet basil and other herbs to taste. Drain the vermicelli and dump in with the vegees. Wonderful meal that takes about 20 minutes from chopping block to dinner table.
