St. Sam's and St. Bede's Recipe Pages Bon Appetit! --------------------------------------------- Cod Swallop (otherwise known in fish country as "seviche"): 1 pound raw fish 1 large, ripe tomato, peeled & sliced 1 large sweet onion, sliced 1 dozen Tabasco or hot mexican chili peppers, chopped 1 tbsp coriander seed 1 cup tomato juice 2 cups fresh lime juice 6 tbsp olive oil 1/2 tsp oregano 1/4 cup or so white wine Cut fish into bite size pieces and stir in all the other stuff marinated in a covered glass dish in the fridge overnight. Serve on crackers garnished with onion. If you can't get fresh cod, any white salt-water fish'll do; don't try no trout or choupique, tho - tastes like s**t. - pax - Andrew H. Auld
