St. Sam's and St. Bede's Recipe Pages Bon Appetit! --------------------------------------------- Rite I - Creole Clay-baked Duck 1 goose 1 duck Salt, Pepper (black & red) or better yet Zatarain's creole seasoning, onion, celery Draw the goose (leaving feathers, skin, etc.) Kill a duck (mallard's best) If you're not up to this there's a domesticated one you can buy, but not one of those white things. Clean & dress duck, season inside and out with seasoning. Stuff with the onion & celery. Place duck inside goose. Roll out a sheet of moist clay and wrap the goose in it. Bury it in bed of coals (hickory or apple) Bake 3 to 4 hours, depending on coals. Remove duck from goose and eat (duck - throw the goose away). - pax - Andrew H.
