St. Sam's and St. Bede's Recipe Pages Bon Appetit! --------------------------------------------- Secret Zucchini Bread 1 3/4 cups sifted all-purpose flour 2 1/4 teaspoons double-acting baking powder 1/2 teaspoon salt 3 tablespoons dutch-processed cocoa, preferably Ghirardelli ;>) 1 teaspoon cinnamon 1/2 cup unsalted butter, softened 1 cup sugar 2 eggs 1 cup whole milk vanilla yoghurt, preferably Brown Cow, with cream on top ;>) 1 1/2 cups finely grated zucchini Cream the butter and sugar together until light and fluffy. Beat the eggs in, one at a time. Stir in the yoghurt and grated zucchini. Mix all of the dry ingredients together and fold them in, lightly, as you would with cake batter. Pour into a greased bread pan and bake at 350 degrees fahrenheit for about 1 hour, or until done. Cool before slicing thinly. You can either use 1 large bread pan and bake for the full time, or two smaller loaf pans and bake for about 35 minutes. I like to use the smaller ones, because you get nice little pound cake-like slices of the bread. With all of the chocolate, you don't really see any green in this, so you don't have to tell people that it contains zucchini.
