St. Sam's and St. Bede's Recipe Pages Bon Appetit! --------------------------------------------- Chocolate Molten Souffle (You'll love this one) - from Commander's Palace - and it works and is easy, relatively: 1 1/2 sticks of butter 1 lb semi sweet chocolate 8 medium eggs 1 1/2 cups sugar 1 1/2 cups all purpose flour Preheat oven to 350 degrees. Grease 8 ramkins/coffee cups (oven proof for you klutzes) place the rest of the butter and chocolate in a double boiler and melt, completely stirring occasionaly Break the eggs into a food processor bowl, add sugar, melted chocolate and process until completely smooth, but not too much. (about 15 seconds). Add flour, process another 10 seconds or so. Scrape it down and then give it another 10 seconds processing until smooth. Pour batter into each ramkin/cup.....place on baking sheet, bake 20 minutes (just until the goo begins to rise and is still slightly soft to touch). Remove from oven, and invert over serving plate after cooling a little but not too much (@2 minutes). Now, Commander's served dusted w/powdered sugar and a white chocolate sauce.... that was too much work for me. These actually work, and I've burnt a bunch of chocolate.... - enjoy - Andrew H.
