St. Sam's and St. Bede's Recipe Pages Bon Appetit! --------------------------------------------- Secret Butter Cookie Recipe 1 cup unsalted butter, softened 1 cup granulated sugar 1 teaspoon almond extract juice of 2 small key limes (1 regular lime will do or even 1 lemon if necessary) 1 cup freshly grated coconut (dried shredded is okay, although best if not sweetened) 1 teaspoon lemon rind (dried is okay) 2 cups all-purpose flour. Cream butter and sugar together until light and fluffy. Add almond extract, lime juice, coconut and lemon rind and mix well. Stir in flour. Dough should be soft but able to be formed into a ball. If necessary, add a bit more flour to get to that stage. Using a teaspoon to measure, shape dough into balls and roll in granulated sugar. (You can use colored sugars for holiday times, or even non-pareils, if you want.) Place balls widely spaced on a lightly buttered cookie sheet. Press with a cookie stamp or the bottom of a glass. The cookies will spread out as they bake. Bake at 325 degrees F for about 10 minutes, until the tops of the cookies are set and the bottoms are beginning to brown. Try to avoid the tops browning or they'll end up too crisp. Let stand on the cookie sheet for a minute before removing. When cool, store in an airtight container. Makes about 4 dozen.
