St. Sam's and St. Bede's Recipe Pages Bon Appetit! --------------------------------------------- Bubble and Squeak Here's the recipe as I adapted it this time. (It's always different, depending on available leftovers. 3 cups mashed potatoes 4 cups shredded cooked cabbage 1 egg, beaten 1 cup grated cheddar cheese 4 thin slices of ham, chopped up Salt and freshly ground black pepper to taste Flour, for coating Oil for frying Mix the potatoes with the cabbage, egg, cheese, and seasonings. Divide and shape into 8 patties. Chill in the fridge for an hour. Just before cooking, toss with a little flour. Heat oil in a frying pan until hot. Carefully slide the patties into the oil and fry on each side for about 3 minutes until golden and crisp. Drain on paper towels, then serve hot The sun never sets on British cooking!
