Can of Black Beans
Diced 'maters (preferably fresh from the garden)
Can of fresh packed corn

Options:
chopped chiles
chopped tomatillos
chopped jalepenos
chopped spring onions
chopped vidalia onions
chopped bell peppers
fresh basil
cilantro
parsley
salt

It also adds a bit of color to the plate.
