St. Sam's and St. Bede's Recipe Pages Bon Appetit! --------------------------------------------- Anglican Chili 2 lbs ground beef (I use ground round or sirloin) 1 cup of finely chopped onion 1 14-16 oz can of tomato sauce 1 14-16 oz can of red kidney beans, drained 6 level tablespoons of Chile powder 2 level tablespoons of Oregano 2 level teaspoons of Paprika 1 level teaspoon of crushed red pepper (more or less) 1 level teaspoon of salt 1 cup of water In a deep skillet or pot, brown beef, drain fat, then add onion to beef and skillet-sear beef slightly while browning onions. Add water, tomato sauce, beans, and all spices. Add enough water to make it soupy. Bring to boil, then simmer on low heat for 30 to 45 minutes. Add more water if needed to suit your taste. Conservative: Cut chili powder in half, use less crushed red pepper. Still works. Liberal: Replace meat with two extra cans of beans. I use one can of white, one of red, and one of black. Looks interesting and tastes great. It also works. Rite I: Don’t change a thing. Rite II: Add one or two 14 oz cans of diced tomatoes, 1 4oz can of chopped mild green chilies and an extra can of beans. Evangelical: Perfect for parish potlucks, dinners, etc. Serve over cooked white rice. Keep beans to a minimum. Garnish with mild grated cheddar cheese and tortilla chips. Lots of rice makes it go a long way. Orthodox: Replace ground beef with cubed steak. Cut cubes into half-inch cubes and cook in same way as ground beef. Church of England: Leave out the spices, replace the beans with peas and chopped carrots. Add a splash of brown sauce and a pinch of sage. Top with mashed potatoes, bake, and call it Cottage Pie. Australian: Just throw the meat on the Barbie. Forget the other ingredients. Marcus Borg: Serve baked beans as a metaphor for chili.
